My Favourite Scone Recipe

This is my go-to recipe for a quick morning tea, something to bring, or at times like these when I want to help my community, to feed the SES and many others who are working tirelessly to get people to safety and back on their feet during the floods and crazy weather of 2022.

Ingredients

butter for greasing tray (if not using baking paper)

225g self raising flour

1/2 teaspoon salt

50g soft butter

125-150ml milk

flour for kneading

milk or beaten egg for glazing (optional)

 

Makes 12 scones

Method

Grease or line a shallow tray with baking paper. Pre heat oven to 222 degrees. 

Sift the flour and salt into a large bowl.

Rubber in the butter gently using your finger tips, until it is all rubbed in and forms a soft breadcrumb like consistency.

Then adding the milk, mix with a flat round-bladed knife to form a soft dough. Once it comes together, knead it very lightly on a floured surface until smooth. Try not to mix or overknead as the dough will then become too dense and hard…we want to keep it light and fluffy. 

Roll out or pat your dough to about 1-2cm thick and using a cookie/scone cutter, cut it out into rounds (or any shape you’d like, my kids love using all the shapes :-). Re roll the trimmings and continue to cut out all the scones until all dough is used. 

Place the scones on the prepared tray and if you like brush the tops with a little milk or beaten egg, this just helps them to brown. 

Bake for 10-12 minutes.

Cool on a wire rack.

Enjoy them with some jam and cream and a cup of tea.

This plain scone recipe forms the base for lots of other scone flavours too, feel free to add cheese, ham, herbs, fruit, anything you fancy. Usually you add these ingredients to the dry mix stage before you add the milk.

My favourite are cheese scones: I add approx 75-100g grated cheese to the dry ingredients before mixing in the milk. Once the scones are cut and placed on the baking tray I also add a little sprinkle of cheese to the top, after I’ve brushed them with a little milk, just before they go in the oven….MMMmmmmmmm, delicious! Enjoy.
